I have a 3.5 Sata drive on the way and would like to use it as an external drive for 4k films. Are there caddies out there that would allow this?

Playing: Resi 7 (PS4), FFXII (PS4)
Watching: Buffy S7, Stranger Things S2
Reading: Above Head Height

My previous Plex server was tha size and near enough full and that was with 720 stuff, storage fills fast and if I was going down the 4k route I would want way way way more than that.

I would also have a look at making a low powered PC to do it, you can pick up a cheap mobo cpu bundle and a case with a load of drive bays and make your own using something like FreeNAS as the OS for it. Gives you all the features and more of a NAS enclosure but can be cheaper and more expandable.

Where’d you buy it/how much was it for 12TB? I’ve got an 8TB one that’s about half full but I think it’d be worth setting something up as a backup drive otherwise that’s my entire media collection gone!

1 drive of that size seems like a bad idea too, there is no way in hell you'll get the data off if it starts to fail, it would be better to have 5 x 3tb disks in RAID5 or Windows Storage Spaces as then there is redundancy and a performance boost, one drive with that much stuff is an epic way to loose everything quick in a drive failure.
