I've started the Old Hunters DLC recently, and after failing a few attempts at Ludwig I decided to explore elsewhere. I find a cave which is guarded by a hunter with a machine gun, it's so dark in there I need to use my torch which means I can't stun him with my gun. A battle ensues, and I almost have him at one point before he manages to heal himself. Suddenly, what I think was the Blood Starved Beast enters the fray and absolutely destroys me. I think maybe I should stay away from there.

Stuns him in his beast phase so you can get a bunch of free hits in.

The dlc is rock hard, although i haven't completed the main game (second run, not ng+).

Yeah, the dlc is definitely positioned in a weird place. You can get into it after Amelia but you should probably wait until you're very close to end-game or like level 70 or something.
The hunters are a massive beefgate.

Did you get the music box? That really does help a bit.

Other tips: counter, counter, counter! Get in close for the visceral attack after countering. Easiest move to counter is his roll.

Avoid the big swing when his weapon transforms.

Dodge to the left or right to avoid his shotgun shot.

When you do land consecutive hits, don't get too greedy; he'll counter you.

Keep any oil for his final form, and use molotovs after hitting him with a oil urn.

He can be countered in final form, too. But watch out for his leap attack as it's a one hit kill move.

Maybe upgrade the weapons a bit more?

Couldn't quite tell from the first attempt but did you actually use the music box? My recollection is you can use it 3 times but only once on the final form.

I find that watching other people beat hard to kill bosses helps, too. Not just to pick up on new things to try, but also a reminder that it is possible to beat the strawberry floaters.

It's funny I was getting my arse kicked and then was like last time and then I'm off. I got my arse kicked again and was like OK 1 more time and then I'll go, I did the same a few times. It's a pain in the arse and makes you feel really gooseberry fool at it, but it really is a game that makes you want just 1 more go over and over.

Oh god. One of those. I swear, there isn't a person who has played a Souls-like game and not had that happen to them. At least now you know you *can* (all but) defeat it. Keep at it! You'll get there.
