You can do an offline player career. So you make your own "pro" player and then start your career. If you pick a big team expect to get loaned out. The more you do on the pitch for your position you unlock skills etc which boosts stats.

Short answer is yes you can.

More to the point the Kim hunter utter bollox when Germany score every time they have a shot. And you’re expected to win from 2 down. Just frustrating more than anything, what were they thinking
