Different cables and different devices? Odd. Try holding the PS3 on button down until it resets the display settings.

My son has a similar problem with his bluray player and TV. Very odd that it happens with different cables and TV's though. Have you tried letting the PS3 and 360 go through the automatic settings when you change TV?

Does the sound die too?
I have this happen with my pc but I'm not sure if it's the tv or gpu.
