Blue Canary wrote:My sister sent me a slow cooker as I have just moved in on my own. I tried one of the recipes in the instruction booklet, but overfilled the pot slightly.
Judging by the mess, this marks both the first and last time I use a slow cooker
Try something not from the booklet, they can be very good when done right and when it is a a good recipe.
This one I did the other week and it was very nice. Mostly it could be done in a job but the flavours were much better from slow cooker as they could come together over a long time.
Ingredients
• 2 tablespoons Olive Oil
• 1 Onions (Chopped)
• 300g Lean Beef Mince
• 200g Carrot Grated
• 1 x 400g can Chopped Tomatoes
• 6 tablespoons Tomato Puree
• 1 Red Chillies (Thinly Sliced)
• 1 teaspoon Ground Cumin
• 1 teaspoon Ground Coriander

• Shake of Worchestershire Sauce
• 1 Beef Stock Cube disolved in 125ml boiling water
• 1 x 400g can Red Kidney Beans (Rinsed and Drained)
• 2 cloves Garlic (crushed and chopped)
Directions
Step 1
Heat the oil in a large, heavy-based saucepan with a lid and fry the onion until softened, add the garlic and cook for an additional minute. Increase the heat and add the mince, cooking quickly until browned and breaking down any chunks of meat with a wooden spoon.
Step 2
Add mince and onion mix to slow cooker and add other ingredients, cook on high for 4 hours
Step 4
30 minutes from the end add the kidney beans and take lid off the cooker
