From the classic era I think I'd have to go with Rime, Seventh Son, and Hallowed. Honourable mentions to Revelations, Children of the Damned, Powerslave, Caught Somewhere in Time, Still Life, Killers...I should probably stop now or I might end up listing almost everything from the first seven albums.
From modern Maiden I'd have to go with When the Wild Wind Blows, For the Greater Good of God and maybe Dance of Death? No, Brave New World. No wait, The Talisman. Ah strawberry float it, it's a futile endeavour.

Yep, they're great. Chemical Wedding in particular is a favourite of mine.
