I bloody love mushrooms and thought it was time the forum was given a place where they can venerate this amazing fungus.

I can't say I have a favourite as I love them all and will gladly pick any mushroom based meal I see on a restaurant menu so I'd like to see what you guys enjoy so I can get some pointers to expand my horizons of this super food.

Even just a good old ham and cheese sandwich is improved a million fold by lathering it in mushrooms lightly fried in butter.

Mushrooms are excellent. So often I will just bung a handful in with whatever I'm cooking. They soak up flavour like some sort of edible sponge and are quite simply brilliant.

Not too keen on the massive ones as they're a bit too chewy but I do like mushrooms in general, thinly sliced chestnut mushrooms fried in butter are especially tasty.

Mushrooms are good. I made a really nice filo pie that was spinach, butternut squash, and mushrooms it was looovely.

I absolutely love mushrooms. For me they only enhance whatever they're added too.

I can quite happily open up a pack and eat them. Lovely stuff.

Same, I have to cut up extra whenever I cook with them as I end up eating loads of the slices.

Bloody love em.
I find that most people that don't like them have only experienced them improperly cooked. Like sliced thin and fried in vegetable oil - yuck.

Cut into quarters and fried in proper butter, with salt pepper and parsley - best food ever. Sometimes I just eat fried mushrooms on toast. Add a poached egg for yes.

Also, mushrooms work so well in recipes because they contain one of the highest naturally occuring instances of the flavour enhancer MSG. Thats why I always have a bottle of mushroom ketchup in the cuoboard.

I find when using them in tomato pasta adding a little balsamic vinegar when frying works well it gives a nice flavour.

It's a bit misleading really... it's not a thick ketchup like tomato sauce. More of watery consistency - a bit like soy sauce or Worcestershire sauce...

But, add it to stews, or bolognese, or hell even to fried mushrooms and reduce it down to a thick glaze.

It's in most supermarkets.. Look near the stock cubes and that.
Sainsburys keep it in the "exotic ingredients" area with the sushi rice and miso and that.

Just had some wild mushrooms in a white wine sauce to go with Guinea fowl. I love mushrooms. +1 for mushrooms on toast = breakfast of champions.
