The drama unfolded on Friday morning and the man abandoned his protest at about 10.45pm.
Police had spent the day trying to talk the man down and firefitghters erected lighting rigs as negotiations continued after dark.
Just before 7pm the man on the roof shouted down that he needed to have a wee, and relieved himself on the chimney stack.
Superintendent Tracy Bradley said in a statement issued at about 8.30pm that every effort was being made to bring the incident to a safe conclusion.
She said: "We understand how very frustrating this is for the people who live and work in this area and we are doing our best to minimise the disruption to those people. I'm really grateful to them for their continued support and co-operation.
"We have had to have a lot of police resources here in Wellington Street over the course of the day as it is necessary for us to protect everyone involved and ensure that nobody gets hurt.
"We are trying to resolve this as quickly as possible and are constantly reviewing the situation and I would like to thank the public for their patience."
A 20-year-old local man was arrested for robbery, affray and two counts of criminal damage following the incident in Wellington Street, Grimsby.
Superintendent Bradley said: "The incident lasted more than 12 hours and involved a lot of police resources including many with specialist skills.
"It was always our intention to resolve the situation peacefully without anyone getting hurt - both the man on the roof and the general public in the area.
"I am very grateful to the local community for their patience, understanding and co-operation and would like to again thank them for their support during what was a very inconvenient and frustrating time for all involved."
