Nothing beats lots of lemon and sugar. Everything else is always a let down. Though, I always mean to try making those puffy Japanese style pancakes sometime.

Lemon juice and sugar all the way. I can never be arsed though - can't remember the last time I had pancakes on pancake day. Must be 10+ years.

I work at a place that sometimes makes pancake mix. It's my job to test them to make sure they're ok.

Pancakes are the perfect food in terms of taste compared to time/effort to make.

I've not made them for yonks either, have needed new nonstick labs really as the ones I have had until recently were old and battered and not very nonstick any more.

I have new ones now I just can't be arsed.
