In real life I have none to save.

In games I horde unless there’s an item I really need.

Just spend. I only save if there's achievement that requires having all of that on hand, otherwise I spend.

I'll grind to make more money if needed to anyways so no point in hoarding for me since may as well use gear/ items to help with next challenges.

Sometimes I spend others I save. Like recently in my FireRed streams. I've spent a fair whack on potions and gooseberry fool, because my usual tactic of fighting a trainer and running back to the Pokémon Centre and then to another trainer and back and forth would be a gooseberry fool stream.

Depends on the game, but generally I go with hoarding because I always want to have some cash reserves in case I suddenly need to splurge on something!

I keep my cash, normally so I can get all the good weapons in one go, or if I need to upgrade my stuff quickly before a boss fight.
