Fair enough, my Bolognese looks like crap start with as I put a load stock in with the tomato's so it looks like a big watery mess so has to simmer to come good.

Ah, can't say I've ever done that with Bolognese, might have to try it - I do add stock with Chilli if I have the time to leave it cooking a while (find a bit of beer can be a nice addition too!) but I rarely have that much time in the evening so I just do a quick version! Always use a good amount of different spices and smoked chipotle paste so it's still never short of flavour.

• 1 tablespoon Olive Oil
• 1 Onion (Chopped)
• 400g Beef Mince
• 2 Large Garlic Cloves (Chopped)

• 2 cans Chopped Tomatoes
• 400ml Beef Stock
• 100ml Red Wine
• 3 tablespoons Tomato Puree
• 75g Spaghetti (Per Person)
Directions
Step 1
Heat a large saucepan over a medium heat. Add a tablespoon of olive oil and once hot add the mince and a pinch of salt and pepper. Cook the mince until well browned. Once browned, transfer the mince into a bowl and set aside 
Step 2
Add a tabletspoon of oil to the pan and onions and a pinch of salt. Fry gently for 5-6 minutes, or until softened and translucent. 
Step 3
Add the garlic and cook for another 2 minutes. 
Step 4
Add the grated carrot then pour the mince and any juices in the bowl back into the pan 
Step 5
Add the tomatoes, stock and wine stir well then simmer gently for 45 minutes, or until sauce is thick and rich, after 35 minutes add the Tomato Puree

If you have a wok then stir frys are very easy to make too... speaking of woks I need to buy a new one after my cleaner stole the old one.

Sounds good, around about what I'd normally do except with a bit more wine, an extra tin of tomatoes and of course the stock. Might have to give it a go with the addition of stock over the weekend!

Simple Meal

Salmon Fillet = wrap in foil. If you want throw in slice of lemon/white win/some herbs. Cook on low heat (100-150) for 15-20min

Boil New Potatoes (take from bag, put in boiling water, poke after 8 min and see if soft, if soft drain)

Boil Veg - green beans etc go well (take from bag, boil for 4-5 min, drain)

Put all on plate

(If fancy a variation try Sweet Chilli in the foil, or replace with Trout fillet)

Spag bol is justifiably a classic.

My usual mix is similar to this but I'd go with more wine, a bit less stock, swap one of the cans of tomatoes for some extra puree, and I tend to alternate between using carrots or celery for a bit of extra texture.

I find fajitas to be a good quick meal as well - fry up some chicken with some olive oil, honey, dried chillies, bit of red wine vinegar, garlic and seasoning. Fry some onions and sliced peppers, then shove it all in a tortilla with a bit of salsa and salad. Happy days!

The real question should be where do you buy the eggs.
My mum gets them from a local ultra free range farm which is a little more expensive but the birds are given loads of space to roam and frolic and everyone knows the quality of and egg lies in the birds frolic rating.

I'm all for free range on a "lets not be dicks to animals before we eat them/their produce" but I must say I don't think I've ever really eaten a cheap egg and thought "that's gooseberry fool" or similarly eaten a free range egg and thought "damn that's a good egg".

Maybe I lack the refinement in my palate to tell the difference, or maybe I've just never had a really bad egg before!
