LOL, I think your mind will change on this later on. Gurren Laggan is epic/mental on a huge scale.

That's a fantastic list of shows. One Piece Manga is the GOAT. The anime is too close to the manga so for years the pacing has been terrible. I would recommend watching the anime for at least 350 episodes (
) before switching to the manga.
One Piece really hooked me in around the episodes you're about to start watching. One Piece.
Only ones I've not seen in your list are Little Witch Academia and Psycho Pass.
One Punch Man and Mob Psycho 100 should absolutely be on your anime must watch list too!
