If you aren't getting smokey with your wood chips though Poser, a gas BBQ genuinely is just an outdoor grill. Smokey is what a BBQ is for!!! And charcoal smoke just tastes of.. well... soot. YUM.

mrspax you are protesting way too much and are just recycling the laziest cliches over and over. There's no need to use lighter fluid and if your food tastes like soot then you've managed your fire poorly.


The biggest issue with charcoal is that people go to B&Q and buy the cheapest grill there which is hard to work with and only lasts for a few months before starting to fall apart. If you accept that you are going to have to spend a bit extra to get something decent and a few accessories like a starter chimney then I still believe charcoal is the superior option especially for something like ribs or brisket where you can cook low and slow and use your barbecue as a smoker.
If you want to use gas I've no issue with that but at least use decent arguments.

Charcoal smoke 'managed' as you say has no flavour at all. Smoke from wood does.

This is why wood fired ovens are so raved about.

You don't see people using all wood barbecues though. It's almost always a combination of a low charcoal fire with a few chunks of wood to provide a gentle smoke over a long cook.

Agreed - because that's an expensive way to do it. Gas with wood chips gives you the same as throwing a couple of chunks of wood in - with more control and far less mess. Nowhere near as much "man points", I grant, but whatever. I am sure that people are beyond convincing. Fair enough. I'll get on with my smoky pork chops that I have planned tonight (lamb for the wifey). Prepped, cooked rested and served in less than 15 mins. :datass:
