I've finished it! (have like 650,000 miles now :lol: )

I have always done at least 5 a day since the nook miles plus goals unlocked to get the daily bonuses. When I was getting close (within a few hundred) I just did some dedicated farming, it didn't take too long! I guess as I just hit 300 days that means I've averaged 10 goals a day, but I was definitely higher than that when I hit it as it has been a while since I hit it.

Some are way quicker than others, you can prioritise pretty well providing you have a little luck on your side in how they roll. Taking a photo is the easiest, always just immediately do that if its there to instantly get another (you just have to delete it from your switch album later if it bothers you like it does me). Catching 5 fish or bugs takes a bit longer but worth it when you think it counts towards those goals too, unless you've already done them. The main ones to not get hung up on are the catching something specific as that can take a while!

There are a few little optimisations you can do but they probably don't make much difference. If you have a earn x from selling goal, sell anything else before shells, fruit or weeds in case on completion you roll another goal to sell those specifically - then you can immediately complete it.
