I'm sure most people won't give a crap but Apple is going to inevitably lock down their M1 laptops so they can only run apps from the App Store and be unable to sideload anything.

I don't care how fast a computer is. I want the choice to install what K damned well please.

TL;DR

No, macOS does not send Apple a hash of your apps each time you run them.
You should be aware that macOS might transmit some opaque information about the developer certificate of the apps you run. This information is sent out in clear text on your network.
You shouldn’t probably block ocsp.apple.com with Little Snitch or in your hosts file.

But that article implies if I write my own app for OSx I have to pay apple for a certificate before I run it which while better isn't great.

Affected laptops get a black screen as described, with nothing happening except the screen lighting up – but staying black – and the Apple logo on the MacBook lighting up.

Caution first

There are anecdotal reports of solutions that work, but we’d certainly advise a great deal of caution around them – the most common one is seemingly to open the MacBook Pro and unplug the I/O board, but messing around with the internals of the machine is something you undertake entirely at your own risk.

If you have been hit by this issue, your best bet is to contact Apple for help, and the company has apparently advised at least some of these affected folks to bring their laptop in for servicing (as mentioned above).

Whatever the root issue is here, hopefully Apple is investigating and will tackle any potential issues with Big Sur and older portables.

Meantime, for those mulling a move to Big Sur, it might be prudent to steer clear of this upgrade – at least for a while – if you’re running one of these older MacBook Pros, particularly if you’re a cautious type.

One of the reasons I don't tend to update firmware straight away (unless you have to; PlayStation for example sometimes blocks you from accessing the store front unless you update), and rather leave it a few weeks.

Considering all this insane power (that's only going to get more impressive in the 2nd and 3rd iterations) it'd be great if Apple did more on the gaming side. Cutting edge stuff like Shadow of the Tomb Raider is thin on the ground, and even then they turn up late or not at all. Or you need to install and run Windows.

One of the biggest criticisms I see (understandably) of gaming on a Mac is cost vs. performance compared to a PC, but that's about to be removed.

Apple can’t do much if the dev support isn’t there. More time and money to develop a Mac version that they either don’t want to spend or can’t afford to.

I’m tempted to get the new Air. Seems to perform great.

I have a MB pro from 2015 which to be fair still runs fast enough just the SDD is small.

I was going to pick up a new ipad Air as I've never had a ipad & a keyboard and I do a lot of travelling it would be nice. My only concern is the pencil & such that I like now will probably feel gimmicky after a while...

Whereas for a little bit more cash, I think well a lighter MacBook is an investment and if I can get enough 5-7 years out of it it’s probably worth the punt..

It is the sort of thing Apple would at least attempt to do before making an about turn due to user feedback.

These new laptops do look very slick but I do still worry I won't be able to install a new torrent app of whatever in a few years time.

I bought a Mac Mini at the start of 2019 because I wanted a relatively affordable Mac and didn't want to pay a premium for the laptops or the ugly, shiny iMac screen. It can edit basic 4k but throw on a couple of special effects and it becomes unusable, even the eGPU didn't help much. So I sold mine or eBay and have ordered the new one, at almost not additional cost.

The new MacBook Air is such great value, passive cooling and no unnecessary touch bar, if you're not a videographer then this could be the perfect machine. YouTuber Max Yuryev does a lot of pro level film and editing work and regularly runs speed tests on his channel. His live reaction to the MacBook Air speed test is shocked and overjoyed. Great to watch!

It's a rare example of a 1st gen Apple product knocking it out the park.
