Oddworld: New 'n' Tasty. Took the original concept and didn’t mess with it too much, but made it look incredible by modern standards.

Resident Evil 2 and THPS 1+2 are easily the best remakes I've played recently.
I was gonna say Crash Team Racing, but that evolved into a whole different beast.

One of Ocarina of Time 3D or Heart Gold/Soul Silver, hard to choose between the two.
