Baking is a science, cooking is an art. The former relies heavily on a very specific core that shouldn't be messed with, the latter just gets better the more you learn to go loose, gain in confidence and start doing your own thing
Precisely why I love baking and hate cooking. I have absolutely no concept of flavour profiles and how best to prepare this or that so I can't freewheel it for toffee, but I can follow a rigid set of instructions like nobody's business!
