Love cheese on toast, if I’m having a mature cheddar I put a small amount of branston pickle on top, sometimes I just chuck loads of Mexicana cheddar on.

cheese on toast - yes!
one thing i also love even though not traditional is manchego/other hard european (muck) cheese toasted till melting, then some roasted toms, grill a bit more, then top it off with some salami or prosciutto :datass:

When i do cheese on toast i put chopped up onions red preferably diced tomato, black pepper and some jalapenos and some drops of Worcester sauce. I toast the bread in the toaster put the toppings on as above and under the grill :datass:

My particular favourite sort of cheese on toast is ciabatta, goats cheese, cherry tomatoes, honey and chilli flakes.

I have a bit of onion and pickle underneath the cheese. I like a salty cheese like Cornish Yarg.

I've only heard roasted cheese on Limmy's homemade show. Had no idea it was a thing outside of that.

Bread in the grill.
Toast one side.
Remove from grill.
Flip it over.
Spread some John West Mackerel Fillets in Tomato Sauce over it.
Grate cheese over it.
Back in the grill until the cheese is melted.
Remove from grill.

I made some near the start of lockdown, using Cafe Rouge’s recipe, with bechamel and everything. It was too much of everything. Just that bit too sickly.

The cheese is pure British cheddar so it cancels out any French influence :lol:
