I know it sounds silly, repeating something you can read above, but...did you read the thread? It states quite clearly the origins of the joke. That's the point of the thread.
Gender assignment's a pretty tricky one these days, if someone chooses to act and dress like a man/woman on simple levels I'd say that I'd be happy to identify that person as he/she, but then in the modern era the way people act and dress is much more individualistic and unless it was clear that someone was male or female then I'd be terrified to address them with any such classification.
You could use "they" and "their" instead of he/she or his/her I suppose.
I mean, it's not really that tricky at all. If in doubt, you ask the person for their preferred pronouns and use those. It's not about how happy
you feel it's about respecting people.
