Ignoring quality of the food, technically it only saves time if you don't plan ahead.

If you know when you want to eat and time it correctly it saves no time.

Nah, you see if you preheat an oven that's an additional trip to the kitchen. One to preheat the oven, another to put the food into the oven, and a final third trip to get the food out. If you don't preheat the oven you only make two trips, one to put the food in and one to get it out. That's a 33% reduction in time and effort.

Worth pointing out that hot water doesn't typically freeze faster than cold water. All things being equal, cold water should (and usually does) freeze faster. It's not well understood why the phenomenon is occasionally observed.

Traditionally Bolognese would have sausage in it as well as carrot, onion and celery, no garlic though as apparently Italians very rarely use garlic and onion together.

Also would have white wine and milk in it.

Given Celery has about the same taste as the stems of Daffodils I'd say it belongs on a compost heap.

I have put celery, carrots and bacon in a bolognese before but that's more of a lasagne base than bolognese.

Standard bolognese for me:

Onions
Beef
Garlic
Beef Stock
Mushrooms
Tomatoes
Green pepper
Red pepper
Yellow pepper
Red Wine
