A few of you might know I work in a fine dining restaurant. Last night due to late cancellations and then some no shows we had no customers. :x So we took the stuff that wouldnt keep meaning us staff got a free 6 course tasting menu. :D The menu was actually designed to reflect different decades in food trends.
Opening snacks-

Crispy Pancake with creamed mushroom filling with a tomato relish-

Prawn and lobster cocktail with avocado ice cream. Got roasted tomatos in there to-

Belly pork, slow cooked pork cheek on smoked potato mash topped with black pudding crumb. Plus veg and apple sauce-

Lemon tart, raspberry coulis and yogurt sorbet-
Image
Frangipane, salted caramel and bay leaf custard-
Image

Up yours no shows!

Aside from the slightly crap presentation of the first course, that all looks excellent, especially the desserts.

Thanks. We probably would have taken a little more care had it been served to real customers but its also meant to be a fun call back on this classic party food-

I get the idea of replicating the 70's/80's style presentation but I think it might be the fact there's only four cocktail sticks stuck in the potatoe that makes it look a bit rubbish .

Also, I can't stand Waldorf salad.

Ahhh. Alas its meant for just 2 people. Not sure it would be Covid secure to have a massive hedgehog everyone goes and picks from. :dread:

Anyone got any recommendations for a bean to cup coffee machine? Keen to get one, as I do enjoy my coffee but don't really know where to start.

I am currently just using an Aeropress and a coffee grinder, does the job wonderfully.

Next thing might be a V60 and start doing filter coffee.
