My favourite veggie cookbook is Hugh F-W's Veg every day. Its excellent, has a good mix of food from different countries and doesn't insist on difficult to buy ingredients.

I've actually got one of the Nigel Slater Greenfeast books, but it's the spring /summer one, so it's a bit more salad based than I'd like.
I think I'm struggling to get away from thinking about meat as the centerpiece of most meals, and consequently viewing a lot of vegetarian meals as looking like side dishes with the meat component missing.
