If you just play the online to have fun you'll be perpetually broke and forever locked out of all the new and probably fun new vehicles and weapons - which is probably why people end up just buying them with real money (at massively inflated prices)
I guess it depends on how you're having that fun. Near everything in the game earns you money, and after two hours of play it's more than likely you've earnt at least 100,000 from various missions, races, or freeroam events (if in a public lobby or an invite only with a few friends). After around ten days of play (not all at once, of course), a player would easily be over a million. At that point, I guess most would go for a shark card to boost their numbers in order to get access to the higher-priced stuff.
I do agree that grinding can suck all the fun out of a game, which is exactly why I don't do it all the time. I don't consider the Cayo Perico heist grinding, since I'm not one of the fools doing speedrun strats to complete it in under an hour to repeat it ad-nauseum. Just once a month (if that) as a cash injection. But what I do have is a spreadsheet and a plan. Which depends on whether certain solo-able things are on double or triple rewards in order to prioritise them. Everyone has a different focus when it comes to the game, which is a-okay.
