There's been so much thrown into the game that I'm not surprised it's become confusing for new players. The game itself doesn't help new players, either, since there is so much on the map. Just stick to Invite Only lobbies (which unfortunately does render plenty of business content inaccessible) and run through the original lot of contact missions - most of which can be done solo (some being harder than others). Unless you can get friends together for public sessions, and they have the skill to defend against the mechanical broomsticks that roam the sky, it's better off avoiding the businesses. Unless that is you find yourself in that rare thing any player loves - a peaceful lobby.
I'd say your best bet would be to earn enough to get an Agency, which is how you access the Dr Dre stuff (which you randomly found yourself at the end of), which can all be done solo and in an invite only lobby, and also has the regular security contracts which offer some fun missions with a decent payout.
Cheers had a better session later on. We worked out you can make your own lobbies under "Quick Join" (stupidly named) and did what seemed like a series (Last Call or something)
No idea how you'd do some of them solo - we massively struggled as a team until someone with an suped up all gold car with a canon on top joined
Also did a VIP mission? Which got use some money but more importantly was interesting (Machine Gun Limo with 5* police around time).
Earning the million or so money need for a nightclub or the Agency seems a long way off though
Awesome. Yeah, earning that first million can be daunting, especially when there's little in the way of passive income (which the Nightclub, Arcade, and Agency can all generate) to bolster the money you're earning. Once you get into the swing of things, you'll come to know what you enjoy the most out of the game.
And the Quick Join thing threw me at first, but it's just one of the weird decisions that seems to have been made with this remastering. The three options you get when pressing it were previously on the main menu, but have now been bunched together and labelled in a way that makes it seem like those other options have just completely disappeared.

As I say, there's too much content in your face at all times, so it's a natural feeling to have. Find what you enjoy most and try your best to ignore the rest.
