I recently got a pressure cooker so decided to try it out on a lovely shoulder of lamb yesterday. What would've been 7-8 hours slow roasting in the oven was just over 2 hours in the pressure cooker. I've never had lamb so delicate and the rich gravy made from the juices just brought everything together so perfectly.
Served with double roasted potatoes, cauliflower cheese, pigs in blankets, stuffing, honey roasted carrots and parsnips, and sprouts. An absolute beauty of a roast
