Exploring Pandora for the fist time in Borderlands: GOTY!

After much deliberation I've decided to head back to Twitch for my streams! So I am now live exploring Pandora for the first time on Borderlands GOTY edition!

Streaming Outer Wilds just now.

I want to invest in some equipment for recording and streaming footage from consoles both new and old.
Can someone give me a good run down of what I should be investing in?
Setting up for newer systems is a no issue as stuff like the Elgato HD60 tends to cover all of them.
I want a set up that will allow me to capture footage from SNES, PS2, N64, GameCube etc to a not-shit standard without spending a fortune doing so.

My capture card arrived in the post today. Anyone got suggestions for HDMI splitters?

HDMI splitter? You want several HDMI's connected to a splitter and then to the card?

What card di you get? I'm asking as you were interested in streaming older consoles, and I have no clue what's good there.

The splitter I have is just some £6 one from Ebay. Does the job.

I want one HDMI input to be outputted separately to both the monitor and the card. I don't want the games going into my card and then the monitor because that might cause lag or mess with image quality and colour..
