Stu's method, except I add 2 sliced cloves of garlic and some generic spice/herb mix for the last 2 minutes.

I approve of this, although I would add the salt after it has hit the pan otherwise its harder to brown.

Its also nice to chuck a sprig of rosemary in there with a nob of butter and a crushed garlic clove. Spoon it all over the steak.
