I think the actual canonical reason is that the radiation has retarded the development of a lot of the mutants under Immortan Joe’s control so they’re really strawberry floating dumb and weird.

The real reason is that it looks quite cool.

It's just an absolutely fantastic movie and it's easy to forget just how effective a director Spielberg can be - the opening sequence where they hold off on revealing Indy, only showing him from behind before finally revealing him in a beautifully framed close up is just brilliantly handled.

I still maintain that the pacing and structure of the movie is just sublime as well - the opening in Peru with the golden idol and subsequent escape from the Hovito sets the scene brilliantly and tells you everything you need to know about Jones (and Bellog for that matter). Then we get some well crafted exposition and macguffin setup with the Army enlisting Indy to track down the Ark before the Nazis do, before the film goes on to lead the viewer through such a fantastic sequence of locations and events (mixing both action and character work brilliantly) - Nepal, the bar scene introducing Marion, her great chemistry with Indy, the interrogation by the Nazi commander and ensuing fight sequence; Cairo, establishing the connection between Indy and Sallah, discovery of the true location of the well of souls ("they're digging in the wrong place!" ), the market fight, "loss" of Marion, "snakes, why did it have to be snakes?!", fighting against the bloke from Auf Wiedersehn Pet in front of the plane, the truck fight sequence, hiding on the steamer, Indy sneaking onto the U-boat as it submerges, the final confrontation and opening of the ark... it's just a brilliant movie!

The difference is that in the poor real world countries the dictators are happy to be extravagant because in comparison to their subjects they are wealthy, but here we are supposed to believe that nobody, including Joe, has much in the way of fuel so there's no logic in him pissing it away.

Immortan Joe is wealthy, he controls access to water and uses it to trade for ammunition from the Bullet Farm and for fuel from Gas Town - Furiosa making a trip to Gas Town is the setup for the film. We see very little of Gas Town in the film but we are told enough to assume that this provides a sufficient supply of fuel as required to support everything we see happen.

Immortan Joe's main motivation is his desire for a healthy heir, so when his wives make an escape (including one who is heavily pregnant) it makes sense that he throws everything he has into the pursuit. He is not acting particularly rationally.

OR is right. Joe is very wealthy. He’s also crazy and obsessed with getting revenge.
