This game has always looked interesting to me. Is the price hike over iOS justified (additional content etc), and is it a game where you would recommend one platform over another (i have an iPad Pro)?

As far as I can see this version is the exact same as the iOS one, but with applied Switch tax. It's not the sort of game that's going to benefit from the Switch's control screen or anything so I'd get it on your iPad.

Probably for the best. Dream Team was pretty bad, and I hear similar for Paper Jam. Both the remakes seemed to be received well, but why they thought remaking a DS game that was barely a decade old was a good idea is beyond me. It's like, you could probably still very easily buy the original and ofc the 3DS can still play it. But yeah, let's hope Paper Mario returns to its roots before that dies from a similar butchering of the series.

It just feels so limited not being able to take the game with you... even if that's to a different room in my house.
