I'd love to be a world-class guitar player. I am incredibly un-musical - I can't hit a triangle - and I'd like to be of a standard like Terry Kath on Chicago's 25 Or 6 To 4 and the Lynyrd Skynyrd guys playing Freebird live in 1977.

I'd also love to be a great artist; with the skills to cover both realistic and modern styles. A writer, too; being able to pen an enthralling thriller. Languages would be marvelous, as well - how wonderful to have the skill to learn and speak in various tongues!

But, overall, I think that the ability to be good enough to play guitar to that high level - that moment of sheer brilliance - wins out.

Languages is the easy and obvious answer, but that's also boring so I'm going to say parkour because being able to traverse perfectly pretty much anywhere would be great.
