Why write mayonnaise when mayo will do.

Because Mayonnaise is the actual name of the foodstuff in question. You don't call mustard 'must' or ketchup 'ketch' do you.

Besides that, Heinz mayonnaise is awful anyway, it's full of sugar and tastes crap compared with Hellmann's (which incidentally contains no sugar).
