Yeah. I've just blown your mind, I think.

I'll maybe come back to it in a few years, hopefully with a better rig. I'm eager to give DS1 a go as a magic user. I've never played that class in any of the games. Usually just like being a Knight and hiding behind my shield.

So I'm playing through this at the moment, and I'm NOT USING A GUIDE (thanks to overwhelming forum encouragement). Been finding it ok going so far, just beat the Abyss Watchers, although I'm not really sure what I should be doing weapon wise. I'm currently wielding a bog standard axe which I've reinforced a bit, but obviously I should be using something better. Any advice?

Warrior, strength. Basically tank as much damage as possible and then punish.

Black Knight Greatsword, Great Club or the Dark Sword are both really good I used them a lot on my strength character.

Awesome, thanks man. I don't think I've picked any of those up yet, but I'll keep a lookout. My trusty battle axe has got me this far.

Not really sure how the hollowing works in this yet, I assume it's something to do with the Embers? My health goes up quite a bit when I beat a boss but then the next time I die again it's back to being low.

Embers are just basically the same as humanity consumables in Dark Souls.

hollow = unkindled

human = enkindled (lets you summon other people)

Haven't struggled at all with this game but Dragonslayer Armour is tearing me a new one. Must be on about attempt 20 now. :x

EDIT - 58th time lucky I guess. No idea why I found that boss so difficult, couldn't get the timing down at all. Reminded me of Fume Knight on DS2.

So I completed the main game today. I want to go into NG+ and use a guide for the rest of the achievements (getting all rings etc) but is there anything I should do first before starting journey 2?

That fight seemed ludicrously difficult on my first few attempts, but once you realise that the teleports don't really change your approach (you just have to consider them a regular attack) I found it quite straightforward. Even the second phase is really just more of the same, just dodge through the attacks and punish.

My shield was totally worthless though so I ended up dropping it and just going two handed with my BKS.

I think this is the reason why I couldn't do it on my own. I'm used to playing these games hiding behind a shield. I learned how to dodge stuff pretty well in this fight, but it took a long time to fight them and I couldn't really maintain my own concentration for that length of time, so I'd strawberry float up eventually.

It's the only boss in the entire series that I've had to summon for.

Me too, I had plenty of practice in the last game though as I had to employ the same technique to beat the Fume Knight. I can see why people play the game that way, it's a lot of fun rolling around avoiding attacks but it's easy to miss the timing and screw up. I really struggled with Dragonslayer Armour because his attack timings are more varied, Lothric's seemed fairly consistent to me.
