You keep everything between both modes from Ships you own, to clothes/guns you unlocked to pets/trinkets, and everything you unlocked in the the Tall Tales/Pirates of the Carribean/Monkey Island etc.
So you can play in Safer Sea's and level up the Trading companies to Level 40 then switch over to High Sea's to go above 40 but it is MUCH slower to get to 40 in Safer Sea's and I personally wouldn't recommend it.

Nice, this is what I wanted to make sure of. I wanted to play Safer Seas to do the story content and get used to the game and then when I’m ready switch to High Seas. I just wanted to make sure any progress I made in one mode carried into the other

The Pirates of the Caribbean and Monkey Island Story content is selectable from the title screen now, no need to go to the actual game first and sail about.

- There is no waypoints at all really, they want you to be able to use the compass and work out your own way. If you're on a sloop (presumably you are) you can look over the balcony just behind the wheel at the map below, it saves you having to run down stairs all the time.
- I've never bought a plunder pass but I THINK it is time limited per season, you level up the 'normal' 100 as you sail, I take no notice of it usually and just playing the game will progress it.
- There are 3 main Currencies in Sea of Thieves:
Gold - earned in game and you can spend on cosmetics both Gun,sword and Clothes related. You'll see a lot of stuff in shops locked but if you hover over them it should tell you how to unlock.
Doubloons - earned in game but for more particular items, All Ashen (and Reaper) chests, keys etc give you doubloons and gold. I don't seek out to get doubloons but just playing the game I've a fair amount now.

It is Gorgeous (DAT WATER), it's 4K 60FPS on Series X and the HDR in this game is ridiculously good.
