I like to think that it's actually mostly white ash, from all the test firings they'd have been doing.

The industrial hearts of the galaxy has never to my mind been explored in any detail whatsoever. We got a bit of an idea of the kinds of galactic corporations which were producing some things in episodes 1-3, and know that companies like Sienar Fleet Systems (also mentioned in the Clone Wars TV show) were producing ships for the Empire in episodes 4-6. but beyond that, we've never actually seen the galaxy's vast shipyards and industrial centers. It'd be cool if the story took us there.

Han presumably picked up a lot on his travels. He may at one point have possessed a book on Wookiee language, too, but he probably didn't read it.

From what I understand, the First Order has grown and developed unchecked because it is not based in known space. Its territories lie in the Unknown Regions, the almost entirely unexplored half of the galaxy. There, it has been building a power base, building a new fleet, charting new hyperlanes, and striking out into the known galaxy on secret kidnapping raids to grow its armies. Nobody noticed them because nobody knew they were there until a few small skirmishes with outlying Republic forces began the spread of rumours. Leia saw the threat, understood its seriousness and tried to warn the Republic, but was shouted down as a warmonger, so she quit the Senate and formed the Resistance - hence the lack of capital ships of any sort.
