They probably just turned off the N64 anti-aliasing.
They've up-ressed the UI elements, and that Big Boo picture is clearly higher-resolution too. I wonder if they've done the same to billboarded sprites such as trees, coins, King Bob-Bomb etc?
Upon rewatching the video, it appears they coins are higher-resolution, too. So it's safe to assume other billboarded sprites get the same treatment.
I guess it's just a question of if they've just scaled up the existing materials or if they've completely redone the bitmaps for things like the sprites.
I was just thinking they'll have done an integer scale up of everything from the original game via emulation. Which is why SM64 is still 4:3.
