Obviously any knowledge we might have is purely from watching TV shows and not from any real life experience...

I thought it was just cooling that set it? Like jelly, jelly doesn’t set because of moisture evaporating, same for glass or boiled sweets.

its a common process for lots of drugs for an evaporation to take place, that way the water comes out and the isolated substance that gets you high is all that remains
if you are moving lots of drugs around its in your interest to transport only what you need to, rather than many tonnes of water you dont
think about it in terms of a basic chemistry thing you can do at home with any number of substances - for example salt - if you want to isolate and extract salt it is done so in solution, and then the solution is evaporated off and the salt remains

Breaking Bad always cut out the bit in the process where they add the jelly cubes to the "cook" - the gelatin in the meth makes it set by trapping the water molecules.
Heisenberg would have made much more money by going for the strawberry flavour rather than bubblegum though.

I know there is boiling as part of process, but I meant to obtain the final product. It’s put in trays then racked where is cools to form glass, as it isn’t heated there wouldn’t be masses of evaporation occurring only some from the surface as it cools.
Hence my assumption that the change of state from viscous liquid to solid would be more a temperature change that a drying action. Hence my comparison to jelly or glass.
