How are you losing all your shields to the Guardians? Are you trying to block their lasers or something? There's a very simple way to temporarily disable their lasers and give you time to deal with them or simply run away...

Yeah, I've been trying to do that shield parry move that deflects the laser back at them, which usually 1HKOs them, or at least 2HKOs some of the toughest ones.
My timing isn't great though as it seems to depend on how far you are from them, and it's hard to get to the optimum distance when you're constantly being blown up!

Parrying is only one of the options, it's the riskiest but has the best reward in terms of the 1HKO
But you can also shoot them in the eye with any arrow to disable the laser for ~10 seconds, during which time you can attack them with other means from relative safety. When it comes back online you can arrow it again! Or as I say you can just leg it away from them whilst they are stunned!

I mean, parrying is unarguably more effective than arrow-to-the-eye, it's just more difficult to pull off.

Guardian shields make it easier though, which you can farm from test of strength shrines.

Indeed, but my point is that there's no real reason to throw all of your shields away on Guardians when they are easy enough to deal with without risking them. By all means try parrying them for a few goes because it's effective, not to mention incredibly satisfying, but when you're on your last shield or two maybe switch it up a bit.

I also think that actually taking on a Guardian directly rather than trying to 1 hit kill them with a parry is a more enjoyable approach, and as we all know the objective is to have fun!

I never really bothered with parrying, just bomb arrow'd in the eye (it does a lot more damage than regular, it counts as a direct hit rather than a blast radius like the bombs on their own) or normal arrow and cut up their legs with guardian sword or some other half decent sword (including the master sword which is 2x effective or something against any sheika technology like guardians). The sheika bow also has the advantage of a straight shot with no ark, as does the Gerudo bow (I think), making it much easier to hit them from far away.

Been on the path to a second 100%. Have been clearing the korok seeds using Zelda maps. Got down to clearing the final couple only to check the count in game and I’m still missing 2.

I always found that sneaking up and then freezing them with Stasis for a few seconds whilst you run in and cut the legs off with the master sword was a quick and easy way if taking them down.

Guardian parry is probably at its most useful in the Trial of the Sword when you have very limited weaponry, and around Hyrule castle for dealing with the Guardian turrets when you have multiple firing from different vantage points

Ya fair enough re: parry, though once I got used to it I became too lazy to do actual fighting.

But the surfing gives you The Undulations! It's like playing Tribes! (Maybe. I've never played Tribes). It is complementary to the rippling folds of the BotW landscape style! Have you tried surfing much beyond the initial discovery? I'm sure you have - but just checking! Because after I'd used it on grass and snow (especially in the North-West where it's almost the area-mechanic) it felt so natural that the finger-combo to unleash the surf is ingrained into my BotW traversal rhythms.

Though I agree, that might well be just my preferred style.

Thinking about it, I kind of wish there was a perma-slide ability (a la the glider) without the shield breaking - to reduce that slight barrier of cost to slide.
