It's because Ireland, Scotland and Wales are all countries inside England to them.
It's exactly this. To the vast majority of Americans, the UK is another name for England, and England is a big land of castles and beefeaters, called London, where the queen of England lives, and Scotland, Ireland and Wales are states within England.
I'd have retorted to those people with, "why doesn't America use the Canadian dollar? They're right next to each other!".
